Gelatin has been widely used in the food industry as a natural food coating material. It possesses unique physical and chemical properties that make it ideal for forming a protective film on the surface of food. There are several key reasons why gelatin is commonly used as a food coating:

This adhesive film has good tensile strength, heat sealing, high gas resistance, oil resistance, and moisture resistance—making it suitable for fruit preservation, meat preservation, food packaging or direct consumption.

Finally, due to environmental concerns and increased demands for high-quality food products, edible films and coatings are being developed as effective alternatives to traditional plastic packaging. The use of gelatin coating has been shown to maintain the quality and shelf life of frozen pork stored for 7 days by delaying significant color changes caused by spoiled myoglobin formation and lipid oxidation. Studies have also demonstrated that coating dried sausages with pork gelatin as an alternative to vacuum packaging reduces weight loss—resulting in economic savings.
